Creamy Cold Brew Ice Pops

Get your afternoon pick-me-up with these creamy cold brew ice pops! They’re vegan and gluten-free but still packed with flavor and a light caffeine punch. Plus all you need is 3 ingredients for the ultimate coffee treat.

Have any of you guys tried Trader Joe’s Cold Brew Popsicles?! OMG SO GOOD. I think they’re technically called Cold Brew Latte Dessert Bars but let’s be real…they’re popsicles. Although apparently the name “popsicle” is trademarked so I have to call these creamy cold brew “popsicles” ice pops, but you get the idea!

For obvious reasons it’s a tad difficult to get to Trader Joe’s these days (I so wish they delivered!) so I went on a mission to create my own version of their cold brew latte pops at home. Theirs are technically a blend of cold brew coffee, cream and sugar but there’s no reason they can’t taste equally as delicious with healthier swaps. Plus we never have milk in the house so I was working with what I had.

Fortunately we’ve been making cold brew non-stop lately so we have a ton of it on hand. Funny story…I’m not currently drinking coffee (it makes me break out!) but I still make cold brew coffee for C cause he loves it so much. I used some to make these cold brew ice pops and since there’s only technically a little over a 1/5th of a cup in each ice pop I figure I can give myself a little treat. It gives me the taste of coffee (which I so desperately miss!) without the skin breakouts. I’ll take it! Okay let’s get into the recipe.

Ingredients You Need:

Cold brew coffee
Non-dairy milk– full fat canned coconut is so good here but you can use any non-dairy milk or dairy milk too
Maple syrup – honey works too
optional: chocolate chips for a little chocolate crunch

You will also need popsicle molds for this recipe. I really like these ones from Kitzini because they make it super easy to remove your popsicles from the molds. Just run them under warm water for a few seconds and they easily slip out!

How to Make Cold Brew Coffee

For a full tutorial on how to make cold brew coffee check out THIS POST. It’s honestly so easy that it’s hard to justify spending the money on cold brew anywhere else. But to break it down quickly you’ll need:

1 cup ground coffee (ground for french press or thickly ground)
5 cups water

Combine water and coffee in a large jar or bowl and let sit in the fridge overnight or for at least 12 hours. Strain the coffee mixture through a fine mesh sieve, nut milk bag or cheesecloth. Voila! You’ve got your cold brew concentrate. Some recipes tell you to mix in extra water because the cold brew is intensely concentrated but for my recipe I find you don’t need to.

How to Make Cold Brew Ice Pops

This cold brew ice pop recipe is honestly so easy to make but I thought I would walk you through the process so you’re feeling fully equipped.

STEP 1: Combine all ingredients in a large bowl and whisk together. Whisk until frothy to get a really creamy texture.

STEP 2: Add your mixture to your popsicle molds. Divide chocolate chips evenly into each mold if using. Place in freezer for at least 4 hours but ideally longer.

STEP 3: Remove ice pops from molds but running each under warm water for a few seconds. Slip them out and enjoy for an afternoon pick-me-up or early morning treat.
